Do we have an "over-breathing" epidemic because of clean air or an "over-hydration" epidemic because of clean water?

I lifted this cited quote from the American Physical Society News June 2012 issue.

Quotes like these make me mistrust scientists.

That reminds me of a researcher, I think his full name is Frank Hu, from Harvard (I think he is in the Public Health division). It's been a while since I looked him up, but I have a college background in food science and nutrition. Hu published findings contrary to the establishment's "party line" with regard to carbohydrates. At the turn of the millenium, the food science & nutrition party line on carbohydrates was to eat more of them (at the expense of fat and possibly even of protein), and to not worry so much about the quality of the carbohydrates. Frank published research showing that even potatoes -- loaded with healthy nutrients such as potassium -- can actually be bad for you. I'm sure that that made a lot of the establishment upset.

Not to mention how his name looks when you abbreviate it for citation purposes:

"F. Hu"

That reminds me of somebody I met several years ago at a teaching seminar. His name was Ho Ho.
